# What you'll need:

→ Jelly Base

01 - 2 cups water
02 - 1 1/2 teaspoons agar agar powder
03 - 1/2 cup granulated sugar
04 - 1/2 cup fruit juice (orange, apple, or mango)

→ Fresh Fruits

05 - 1/2 cup diced strawberries
06 - 1/2 cup diced kiwi
07 - 1/2 cup diced mango
08 - 1/2 cup diced pineapple
09 - 1/4 cup blueberries

# Method:

01 - Wash, peel, and dice strawberries, kiwi, mango, and pineapple into small, bite-sized pieces. Rinse blueberries and set all fruits aside.
02 - Combine water and agar agar powder in a medium saucepan. Whisk thoroughly until powder is completely dispersed.
03 - Bring mixture to boil over medium heat, stirring constantly. Reduce heat and simmer 2 minutes until agar agar fully dissolves.
04 - Add granulated sugar and stir until completely dissolved. Remove from heat source.
05 - Pour in fruit juice and mix well. Let cool 2-3 minutes, watching carefully to prevent setting.
06 - Distribute diced fruits evenly across silicone mold or glass dish, ensuring balanced placement.
07 - Gently pour agar agar mixture over fruits, covering completely. Cool to room temperature, then refrigerate 45 minutes until fully set.
08 - Unmold or cut into cubes. Serve chilled for best texture and flavor.

# Expert advice:

01 -
  • Its completely plant-based and sets beautifully without any animal products
  • You can customize it with any seasonal fruits for endless variety
02 -
  • Fresh pineapple and kiwi contain enzymes that can prevent setting, so blanch them briefly before use
  • Agar agar sets at room temperature and will not melt again, unlike gelatin, so work quickly once dissolved
03 -
  • Always dissolve agar agar in cold liquid first to prevent clumping
  • Work quickly once the agar mixture is ready, as it begins setting almost immediately
