# What you'll need:

→ Chicken

01 - 1.3 lbs boneless, skinless chicken breasts or thighs, cut into 1 inch cubes
02 - 2 tbsp vegetable oil
03 - 1 tsp garlic powder
04 - 1 tsp soy sauce (gluten-free if needed)
05 - ½ tsp ground black pepper
06 - ½ tsp salt

→ Bang Bang Sauce

07 - ⅓ cup mayonnaise
08 - 2 tbsp sweet chili sauce
09 - 1 tbsp sriracha sauce (adjust to taste)
10 - 1 tbsp honey
11 - 1 tsp rice vinegar

→ Garnishes

12 - 1 tbsp sesame seeds
13 - 2 scallions, thinly sliced
14 - Fresh cilantro leaves (optional)

# Method:

01 - Toss chicken cubes with vegetable oil, garlic powder, soy sauce, black pepper, and salt. Marinate for at least 10 minutes or up to 2 hours refrigerated.
02 - Thread marinated chicken pieces onto skewers. If using wooden skewers, soak them in water for 20 minutes to prevent burning.
03 - Preheat a grill or grill pan to medium-high heat.
04 - Grill chicken skewers for 10-15 minutes, turning occasionally, until the chicken is cooked through and slightly charred.
05 - While the chicken cooks, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar in a bowl.
06 - Transfer cooked skewers to a plate. Brush liberally with Bang Bang sauce or drizzle over the top. Sprinkle with sesame seeds, scallions, and cilantro if using. Serve immediately.

# Expert advice:

01 -
  • The sauce hits that perfect balance of creamy heat that keeps everyone coming back for seconds
  • Everything comes together in under 30 minutes, making weeknight dinners feel like a treat
  • You can prep everything ahead and just fire up the grill when guests arrive
02 -
  • Wooden skewers need a good 20 minute soak or theyll burn before your chicken is done
  • Let the chicken rest for 2 minutes off the heat before saucing, or the sauce will slide right off
  • The sauce thickens as it sits, thin with a teaspoon of water if needed before brushing
03 -
  • Clean your grill grates while hot, sticky chicken is no fun to deal with
  • Room temperature chicken cooks more evenly, take it out 20 minutes before grilling
