Cajun Beef Sausage Hash With Eggs (Print version)

Spicy Cajun beef sausage, crispy potatoes, and eggs in a hearty southern breakfast skillet.

# What you'll need:

→ Meats

01 - 12 oz Cajun beef sausage, sliced into rounds

→ Vegetables

02 - 4 medium Yukon gold potatoes, diced (about 1.3 lbs)
03 - 1 medium yellow onion, diced
04 - 1 red bell pepper, diced
05 - 2 green onions, sliced for garnish

→ Spices & Flavorings

06 - 1½ tsp Cajun seasoning
07 - ½ tsp smoked paprika
08 - Salt and freshly ground black pepper to taste

→ Eggs

09 - 4 large eggs

→ Pantry

10 - 2 tbsp olive oil
11 - 1 tbsp unsalted butter (optional)

# Method:

01 - Heat 1 tbsp olive oil in a large skillet over medium heat. Add diced potatoes and sauté for 6–8 minutes, stirring occasionally, until softened and golden.
02 - Add remaining olive oil, diced onion, and red bell pepper to the skillet. Cook for 4–5 minutes until vegetables are softened.
03 - Stir in sliced Cajun beef sausage. Cook for 5–6 minutes, allowing sausage to brown and flavors to meld together.
04 - Sprinkle Cajun seasoning, smoked paprika, salt, and pepper over the mixture. Toss well to evenly distribute spices.
05 - Create wells in the hash and crack eggs into each well. Cover and cook for 4–6 minutes until whites are set but yolks remain runny, or cook to desired doneness.
06 - Remove from heat. Garnish with sliced green onions and serve hot while eggs are warm.

# Expert advice:

01 -
  • Everything cooks in one skillet so cleanup is practically nonexistent
  • The Cajun seasoning transforms basic breakfast ingredients into something that feels like a weekend treat
  • Its hearty enough to keep you full through a long morning but somehow never feels heavy
02 -
  • Crowding the pan with too many potatoes at once will make them steam instead of crisp—work in batches if your skillet feels cramped
  • Cajun seasoning salt content varies wildly between brands, so always taste before adding extra salt
  • The eggs continue cooking even after you remove the pan from heat, so pull them slightly earlier than you think is necessary
03 -
  • Cut your potatoes into uniform dice so everything cooks at the same rate—nothing worse than some pieces burnt while others are still raw
  • Preheat your skillet properly before adding any ingredients, or you'll end up with a stuck-on mess instead of those beautiful crispy edges
