Cajun Spiced Roasted Chickpeas (Print version)

Crunchy, spicy chickpeas with bold Cajun flavors, ideal for snacking or salad toppings.

# What you'll need:

→ Chickpeas

01 - 2 cans (15 oz each) chickpeas, drained and rinsed

→ Spices & Seasonings

02 - 2 tablespoons olive oil
03 - 1 teaspoon smoked paprika
04 - 1 teaspoon garlic powder
05 - 1 teaspoon onion powder
06 - 1 teaspoon dried oregano
07 - 1 teaspoon dried thyme
08 - 1 teaspoon cayenne pepper
09 - 1 teaspoon ground black pepper
10 - 1 teaspoon fine sea salt

# Method:

01 - Preheat the oven to 400°F. Line a baking sheet with parchment paper.
02 - Pat the chickpeas very dry with paper towels. Remove any loose skins for extra crispiness.
03 - In a large bowl, toss chickpeas with olive oil until evenly coated.
04 - Add smoked paprika, garlic powder, onion powder, oregano, thyme, cayenne, black pepper, and salt. Toss well to coat all chickpeas with seasoning.
05 - Spread chickpeas in a single layer on the prepared baking sheet.
06 - Roast for 35-40 minutes, shaking the pan halfway through, until chickpeas are golden and crispy.
07 - Let cool for 10 minutes before serving. Chickpeas will continue to crisp as they cool.

# Expert advice:

01 -
  • They somehow manage to be both incredibly addictive and legitimately good for you
  • The spice blend hits that perfect sweet spot between warming and wow my mouth is on fire
  • Double the recipe immediately because a single batch disappears faster than you expect
02 -
  • Undercooked chickpeas will be soft inside and no amount of additional roasting will fully fix the texture problem
  • These lose their magical crunch over time, so plan to eat them within three days
  • The burning smell is not part of the process. If you smell something acrid, they are done or slightly overdone
03 -
  • Make extra of the spice blend and store it in a jar. Next time you want these, you are halfway there before you even preheat the oven
  • Let the pan cool completely before storing. Warm chickpeas in a sealed container create condensation, which is exactly what you do not want
