# What you'll need:

01 - 1.5 lbs russet potatoes, cut into fries or frozen fries
02 - 2 tbsp olive oil
03 - 1/2 tsp salt
04 - 1/4 tsp black pepper

05 - 1.5 cups shredded sharp cheddar cheese
06 - 6 slices turkey bacon
07 - 2 tbsp chopped green onions
08 - 1/4 cup sour cream

# Method:

01 - Preheat oven to 425°F. Line a baking sheet with parchment paper.
02 - If using fresh potatoes, toss the cut fries with olive oil, salt, and pepper. Spread in a single layer on the baking sheet.
03 - Bake for 25 to 30 minutes, flipping halfway, until golden and crispy. If using frozen fries, cook according to package instructions.
04 - While fries bake, cook turkey bacon in a skillet over medium heat for 5 to 7 minutes until crispy. Transfer to a paper towel-lined plate and chop into small bits.
05 - Remove fries from oven. Immediately sprinkle with shredded cheddar. Return to oven for 3 to 5 minutes, until cheese is melted.
