Honey Lemon Pink Soda (Print version)

A sweet, tangy pink soda blending honey, lemon, and grapefruit with a sparkling finish. Perfect summer cooler.

# What you'll need:

→ Base

01 - 2 tablespoons honey
02 - 1 large lemon, juiced (about 3 tablespoons fresh lemon juice)
03 - 1/2 cup pink grapefruit juice (fresh or bottled, unsweetened)
04 - 1 cup sparkling water, chilled

→ Color and Garnish

05 - 1 tablespoon grenadine syrup
06 - Ice cubes, as needed
07 - Lemon slices, for garnish
08 - Fresh mint leaves, for garnish (optional)

# Method:

01 - In a small pitcher or cocktail shaker, combine the honey and fresh lemon juice. Stir or shake vigorously until the honey is completely dissolved.
02 - Add the pink grapefruit juice and grenadine syrup to the honey-lemon mixture. Stir until well combined.
03 - Fill two serving glasses generously with ice cubes.
04 - Divide the honey-lemon-pink base evenly between the two ice-filled glasses.
05 - Pour chilled sparkling water over each glass, filling to the top. Stir gently to combine without losing the effervescence.
06 - Garnish each glass with a lemon slice and a sprig of fresh mint if desired. Serve immediately while cold and fizzy.

# Expert advice:

01 -
  • It comes together faster than you can find your sunglasses and requires zero cooking whatsoever.
  • The pink grapefruit and grenadine combination makes it look fancy enough to serve at a brunch without anyone guessing how simple it really is.
02 -
  • If you add the sparkling water before the juice mixture, you will lose half the carbonation to aggressive stirring and end up with a flat drink.
  • Taste the grapefruit juice first because some bottles are sweeter than others and that will change how much honey you actually need.
03 -
  • Warm the honey slightly in the microwave for ten seconds before mixing and it will dissolve into the lemon juice in seconds with zero effort.
  • Chill your glasses in the freezer for fifteen minutes beforehand and the drink stays cold and bubbly noticeably longer.
