→ Seasonings

02 - 2 tablespoons olive oil
03 - 1 teaspoon garlic powder
04 - 1 teaspoon smoked paprika
05 - ½ teaspoon dried oregano
06 - ½ teaspoon salt
07 - ¼ teaspoon freshly ground black pepper

08 - 2 tablespoons fresh parsley, chopped
09 - 1 tablespoon lemon juice

# Method:

01 - Preheat air fryer to 400°F for 3 minutes.
02 - Place eggplant cubes in a large bowl. Drizzle with olive oil or spray lightly for a lower calorie option.
03 - Add garlic powder, smoked paprika, oregano, salt, and black pepper. Toss until eggplant is evenly coated.
04 - Arrange eggplant pieces in a single layer in the air fryer basket. Cook in batches if necessary to avoid overcrowding.
05 - Air fry for 12–15 minutes, shaking the basket halfway through cooking, until eggplant is golden brown with crispy edges.
06 - Transfer to a serving plate. Drizzle with lemon juice and sprinkle with fresh parsley if desired. Serve immediately.

# Expert advice:

01 -
  • The exterior gets impossibly crispy while the inside stays buttery tender, creating the most satisfying texture contrast
  • You can eat a huge bowl without any of the guilt that usually comes with fried eggplant
  • It comes together in literally 25 minutes from start to finish
  • The spices transform plain eggplant into something that feels restaurant special
02 -
  • Overcrowding the basket is the number one mistake, leading to steamed eggplant instead of crispy cubes
  • Not preheating the air fryer means longer cooking time and less consistent browning across batches
  • Skipping the lemon juice at the end makes the dish taste somehow incomplete and less vibrant
03 -
  • Spraying the eggplant with olive oil instead of drizzling will give you more even coverage and use less oil overall
  • Don't salt the eggplant ahead of time, that step is unnecessary with air frying and actually makes it less crispy
