# Method:

01 - Whisk together chia seeds, coconut milk, maple syrup, and vanilla extract in a medium bowl until well combined and no clumps remain. Cover and refrigerate for at least 2 hours or overnight until pudding thickens to desired consistency.
02 - Combine diced mango, lime juice, and maple syrup in a blender. Process until completely smooth and creamy. Transfer to a separate container and set aside.
03 - Rinse blender thoroughly, then add dragon fruit, lime juice, and maple syrup. Blend until completely smooth. The vibrant pink color should be uniform throughout.
04 - Once chia pudding has set, create layers in each serving glass: begin with a layer of chia pudding at the bottom, followed by mango puree, another layer of chia pudding, and finish with dragon fruit puree on top.
05 - Top each glass with fresh mint leaves, chopped nuts, or toasted coconut flakes as desired. Serve immediately for optimal texture, or refrigerate until ready to serve.
