01 - Add oats, walnuts, and pecans to a food processor. Pulse until finely ground.
02 - Add shredded carrots, dates, shredded coconut, maple syrup, vanilla extract, cinnamon, ginger, nutmeg, and salt. Process until the mixture is sticky and holds together when pressed, scraping down sides as needed.
03 - Transfer mixture to a bowl and fold in raisins, chocolate chips, or chia seeds if using.
04 - Scoop out tablespoon-sized portions and roll into balls with your hands.
05 - Roll each bite in shredded coconut if desired for a textured coating.
06 - Refrigerate for at least 30 minutes before serving for best texture. Store leftovers in an airtight container in the refrigerator for up to 1 week or freeze for up to 3 months.
