Probiotic Jello Snacks (Print version)

Whip up gut-friendly fruit jello with real juice and probiotics. A nutritious snack that sets in the fridge for a healthy treat.

# What you'll need:

→ Fruit Base

01 - 2 cups 100% fruit juice (apple, grape, or mixed berry)
02 - 2 tablespoons honey or maple syrup

→ Thickening Agent

03 - 2 tablespoons unflavored gelatin powder

→ Probiotics

04 - 2 tablespoons plain probiotic yogurt or 2 capsules probiotic powder

# Method:

01 - Pour 1½ cups of the fruit juice into a medium saucepan and sprinkle gelatin evenly over the surface. Let stand for 5 minutes to allow gelatin to bloom.
02 - Place saucepan over low heat, stirring constantly until gelatin dissolves completely. Do not let the mixture boil. Remove from heat source.
03 - Stir in remaining ½ cup cold juice and honey or maple syrup if desired. Allow mixture to cool to lukewarm temperature, approximately 100°F.
04 - Whisk in probiotic yogurt or probiotic powder contents once mixture has cooled below 100°F to preserve beneficial bacteria.
05 - Pour mixture into silicone molds or a glass baking dish. Refrigerate for minimum 2 hours until completely set.
06 - Unmold or slice into cubes. Store refrigerated until ready to serve.

# Expert advice:

01 -
  • They taste just like the fruit snacks you loved as a kid but with none of the weird ingredients you cannot pronounce
  • My family actually asks for these instead of candy now, which still feels like a small victory
02 -
  • Heat kills probiotics, so letting the mixture cool completely before adding them is absolutely nonnegotiable
  • I learned the hard way that agar-agar requires different ratios than gelatin, so stick to what the recipe calls for unless you are ready to experiment
03 -
  • A tiny pinch of sea salt enhances the fruit flavor and helps balance the sweetness
  • If using yogurt, choose a plain variety without added flavors or sweeteners for the cleanest taste
