Tender beef slow-cooked in garlic butter sauce with potatoes for a comforting weeknight meal.

# What you'll need:

→ Beef

01 - 2.5 lbs beef chuck roast, cut into 2-inch cubes
02 - 1 tsp kosher salt
03 - 1/2 tsp black pepper

→ Vegetables

04 - 1.5 lbs baby potatoes, halved
05 - 1 large onion, sliced into thick rings
06 - 3 large carrots, peeled and cut into 1-inch chunks

→ Garlic Butter Sauce

07 - 6 tbsp unsalted butter, melted
08 - 8 cloves garlic, minced
09 - 1 tbsp fresh thyme leaves
10 - 1 tbsp fresh rosemary, chopped
11 - 1 tsp paprika
12 - 1/2 tsp crushed red pepper flakes

→ Broth

13 - 1 cup low-sodium beef broth

→ Garnish

14 - 2 tbsp fresh parsley, chopped

# Method:

01 - Pat the beef cubes dry with paper towels, then season evenly with kosher salt and black pepper on all sides.
02 - Heat a large skillet over medium-high heat. Sear the seasoned beef cubes in batches until browned on all sides, about 2 to 3 minutes per batch. Transfer browned beef to the slow cooker.
03 - Add the halved baby potatoes, sliced onion, and carrot chunks to the slow cooker, distributing them evenly around and between the beef pieces.
04 - In a small bowl, whisk together the melted butter, minced garlic, fresh thyme, chopped rosemary, paprika, and crushed red pepper flakes until well combined.
05 - Pour the garlic butter mixture over the beef and vegetables in the slow cooker. Add the beef broth around the edges.
06 - Cover and cook on LOW setting for 7 to 8 hours, or until the beef is fork-tender and easily pulls apart.
07 - Gently stir the cooked beef and vegetables. Taste and adjust seasoning with additional salt and pepper if needed. Garnish with chopped fresh parsley before serving.

# Expert advice:

01 -
  • The beef becomes fork-tender without any effort on your part, perfect for those days when you want a homecooked meal without standing over the stove
  • The garlic butter sauce creates its own rich gravy that youll want to spoon over every single bite
  • Everything cooks in one pot, meaning less cleanup and more time to actually enjoy your evening
02 -
  • Searing the beef first is absolutely not optional, that caramelization creates the deep, complex flavor foundation that makes this dish taste like it simmered all day
  • Resist the urge to lift the lid during cooking, every time you do you release heat and add 15 to 20 minutes to the cooking time
  • The sauce might look thin when you first open the slow cooker, but give it a gentle stir and it will thicken beautifully as the starches from the potatoes get incorporated
03 -
  • Pat the beef completely dry before seasoning, excess moisture will create steam instead of that perfect sear youre after
  • Let the meat rest for a few minutes after searing before adding it to the slow cooker, this helps retain those delicious juices
