St. Patricks Day Lucky Chow (Print version)

A festive Irish-inspired treat with white chocolate coating, green candies, marshmallows, and gold chocolate coins.

# What you'll need:

→ Base

01 - 6 cups rice cereal squares

→ Chocolate Mixture

02 - 1 cup white chocolate chips
03 - 1/2 cup creamy peanut butter
04 - 1/4 cup unsalted butter
05 - 1 teaspoon vanilla extract

→ Coating

06 - 2 cups powdered sugar

→ Add-Ins & Decorations

07 - 1 cup green candy-coated chocolates
08 - 1 cup mini marshmallows
09 - 1/2 cup gold chocolate coins, chopped or whole
10 - 1/2 cup green sprinkles or sanding sugar

# Method:

01 - Place the rice cereal squares in a large mixing bowl.
02 - In a microwave-safe bowl, combine white chocolate chips, peanut butter, and butter. Microwave in 30-second intervals, stirring between each, until smooth and fully melted (about 1–2 minutes).
03 - Stir in vanilla extract.
04 - Pour the chocolate mixture over the cereal and gently fold with a spatula until evenly coated.
05 - Transfer the coated cereal to a large zip-top bag. Add powdered sugar, seal the bag, and shake until the cereal is thoroughly coated.
06 - Spread the mixture out on a parchment-lined baking sheet to cool for 10 minutes.
07 - Once cooled, stir in green candy-coated chocolates, mini marshmallows, chopped gold coins, and green sprinkles. Gently toss to combine.
08 - Store in an airtight container until ready to serve.

# Expert advice:

01 -
  • It comes together in twenty minutes but tastes like you spent all day planning something magical
  • The combination of salty cereal, sweet white chocolate, and creamy peanut butter is completely addictive
  • You can customize the mix-ins based on what your family actually likes to eat
02 -
  • Work quickly once you pour the chocolate over the cereal, or it will start to set and become harder to coat evenly
  • Let the coated cereal cool completely before adding the marshmallows, or they will melt into disappointing little puddles
  • The shake-the-bag method is essential for that authentic puppy chow texture, stirring just does not distribute the sugar the same way
03 -
  • Use room-temperature ingredients to help the chocolate melt smoothly and prevent seizing
  • If your chocolate mixture starts to look grainy, add a tiny splash of cream and whisk vigorously to bring it back
