# Expert advice:

01 -
  • The hot grilled chicken against crisp chilled salad creates that perfect temperature contrast restaurant dishes always nail
  • You get all the satisfaction of BBQ without the heavy feeling of traditional sides
02 -
  • Skip the BBQ sauce during initial grillingthe sugars will burn and create an acrid taste that ruins the whole dish
  • Let those skewers rest for at least 5 minutes before serving or all those juices will run out onto your salad
03 -
  • Double skewer the chicken pieces using two parallel skewers for each one to prevent spinning when you flip them
  • Oil your grill grates right before cooking using a paper towel dipped in vegetable oil held with tongs
